Our Extra Virgin Olive Oil is cold pressed once
a.k.a. Olio Nuovo
The Story of Our Grove
We chose Cortona and Cortona chose us for a reason! Our choice for this grove, this land, and this process is because we believe that truly exceptional olive oil cannot be engineered at scale. And so we show up every year, for the harvest alongside family and friends, with our hands in the branches and our feet on the Tuscan hillside.
Quality Over Everything
Every decision we make in producing Piuma d'Oro comes back to one thing: quality over everything else. Our oil is single origin, from a single grove, cold-pressed once, and Extra Virgin. Artisanal, using traditional low-intervention methods, and grown on the terraced hillsides of Cortona with sustainable farming practices. Nothing added, nothing compromised.

Single Origin & Grove
Every bottle comes from our single grove in Cortona. No blending, just the true character of our soil and microclimate.
High Polyphenols
Averaging 400-450 mg/kg, our oil is rich in natural antioxidants that provide that distinctive peppery finish.
Cold-Pressed Perfection
Pressed once at controlled temperatures within hours of harvest at a mill just 1 mile away to protect every drop of flavor.
Ultra-Low Acidity
At 0.2-0.25%, our acidity is far below the Extra Virgin limit, ensuring better taste and a longer shelf life.
Grow with Care
No pesticides or chemicals. We use sustainable practices to care for our terraced hillsides as nature intended.
Harvested by Hand
Hand-harvested by Nelson, Karla, family and friends to minimize damage to trees and olives, preserving optimal quality.

The Artisanal Process

STEP 01
Grown with Care
Our grove in Cortona is tended by hand, ensuring that every olive tree flourishes in the sustainable Tuscan soil.

STEP 02
Selective Harvest
At the peak of ripeness, we handpick our olives to prevent bruising and preserve the delicate polyphenol profiles.

STEP 03
Cold Pressed
The olives are milled and cold-pressed within hours of harvest to extract the purest extra virgin oil with an artisanal touch.
